Caribe Sour

• 3 cl Tequila
• 1,5 cl Rhum blanc
• 0,5 Blanc d'œuf
• 2,2 cl Jus de citron vert
• 2 Brin de menthe
• 2,2 cl Sirop de sucre
• 8 Drops Smoked salt bitters
• 1 Zeste de citron vert - pour la garniture

Instructions

Muddle one sprig of mint with simple syrup in the bottom of a mixing glass. Add spirits, lime juice and egg white. Dry shake (without ice) 10 seconds. Add ice and shake vigorously to chill and emulsify. Strain into a chilled cocktail coupe. Garnish with the expressed oil of a lime zest, then discard the zest. Drop 8 drops smoked salt bitters (or salt tincture) on the surface of the drink. Garnish with remaining mint sprig.

• Tequila: Tequila is a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila 65 km (40 mi) northwest of Guadalajara, and in the Jaliscan Highlands (Los Altos de Jalisco) of the central western Mexican state of Jalisco. The red volcanic soils in the region of Tequila are well suited for growing the blue agave, and more than 300 million of the plants are harvested there each year. Agave grows differently depending on the region. Blue agaves grown in the highlands Los Altos region are larger and sweeter in aroma and taste. Agaves harvested in the valley region have a more herbaceous fragrance and flavor. • Rhum: Le rhum (anglais : rum, espagnol : ron) est une eau-de-vie originaire des Amériques, produite soit par distillation de sous-produits fermentés de l'industrie sucrière ou mélasse : le rhum industriel ou traditionnel, soit à partir du jus de canne à sucre fermenté : le rhum agricole. Il est consommé blanc, vieilli en fût (rhum vieux) ou épicé; il prend alors une coloration ambrée plus ou moins foncée.
