Penicillin

• 2 oz Blended scotch whisky
• 1 Splash Islay whisky - float on top
• ⅓ oz Ginger syrup
• ⅓ oz Honey syrup
• ¾ oz Lemon juice
• 1 Candied ginger - for garnish

Instructions

Combine the ingredients (except the Islay whisky) into a cocktail shaker filled with ice. Shake vigorously until the drink is sufficiently chilled. Strain the drink into the chilled Rocks glass. Float the Islay whisky on top. Garnish with the Candied ginger.
